Delicious cashew coconut Mysorepaak combining the yumminess of coconut barfi and Mysore paak in one sweet with a delightful crunch of fried cashews ..recipe in YouTube video in comments with text ๐Ÿ™‚

Recipe
Ingredients

1cup grated coconut
3/4 cup besan / chickpea flour
3/4 cup melted hot ghee
3 cups sugar
1/4 cup cashew nuts

Method
Keep a plate or tin greased with melted ghee .
Fry cashews with 2 tbsp ghee , keep aside
Fry chickpea flour with 2-3 tbsp hot melted ghee for 1-2 minutes . The roasted flour resembles thick pasty batter .Melt sugar with just enough water and when it starts bubbling add grated coconut , fried cashews and the roasted batter . Reduce flame and keep stirring mixture till it starts bubbling and thickening .it appears frothy and holes will be formed . This is the right texture to remove Mysore paak mixture from flame and quickly pour on the greased plate . Make the knife marks lightly before mixture cools completely . Break into pieces when cooled well .Enjoy delicious cashew coconut Mysore park .

Hey lovely people, hope you are all fine and are as addicted to cal as i saw you a decade ago (ahem.. a month and half to be precise ๐Ÿ˜). I had a quick rehab in this break i took. waking up early in the morning, doing yoga, having green tea, cutting down on sweets , yeah totally amazing isn't it ?? it felt great and that is the exact moment i would generally wake up from my sleep ๐Ÿ˜‰. Mera kuch nahi hosakta ๐Ÿ˜‚. So thought its about time i get back to cal, at least the picky eaters will get to eat some good food due to the inspiration i get from you all โคโค.

So here i am with a super healthy papaya and atta cake ๐Ÿ˜๐Ÿ˜. It is inspired from Funke Koleosho's blog, i found it from google when i was trying to use up an over ripe but not too tasty papaya. I made some healthier swaps in the recipe and it didnt disappoint me. I was super delighted at the response i got for the cake. I have made a lot of atta cakes earlier but it never resulted in such a fluffy cake ever. I can not recommend this cake enough to you guys Below is the recipe, please do tryit, after all, we are all worth the yummyness ๐Ÿ˜‰. Its a two step process but its totally worth it.

Sugar 1 cup
Ripe papaya pulp 1 1/4 cup

Mash the papaya with fork to get pulp, do not blend it. Its ok if it has little chunks. Mix the two together in a pan and cook them till it becomes jammy syrup. It took me about 8-10 mins. It has to be of flowy consistency. Cool it down completely before moving on to the next step.

Atta - 1 cup
Baking powder 1 tsp
Sieve them together and keep aside.

Eggs 2
Refined Oil 1/2 cup ( i used rice bran)
Essence 1 tspn

In a big bowl whip egg well till frothy, use fork or bubble whisk for it. Add in oil little at a time n keep whipping till it becomes creamy. Now add the essence and completely cooled down papaya syrup. Mix everything well with a spatula.

Now slowly add in atta n fold it in little by little. The mixture shouldnt be too thick, it should be flowy. Line a greased tin with parchment paprer, pour the batter in and bake as you normally do , either in oven or stove top. Check after 35 mins. I baked it in the pressure cooker for 35 mins, then in the oven for 4 mins to give it a brown top.

Meringue is my current obsession. When I'm bored, I crack a couple of egg whites into a bowl, a drop of vinegar and gradually add some caster sugar, whisking them all together to get this beauty.

It's the easiest and fastest dessert to whip up, consisting of just two ingredients but you can either make or break it.

Don't feel intimidated tho' coz once you get the hang of it, you'll simply enjoy making them all the time.

I'm sharing a few tricks I've learnt along the way to nail that meringue and I've recreated Nigella's Lemon Pavlova recipe with the gorgeous meringue mixture.

Ras Malai ( Rossogullas dipped in sweetened little thickened milk refrigerated, served cold).

How to make Rossogullas. Quick recipe
Boil milk, then squeeze a lemon on it to make milk curdling into chenna (cheese). Take a white cloth put the chenna, wrap the cloth and squeeze water out, then spread the chenna on a plate to dry and make couple of ball shaped. Now heat water on a container to boiling point and put the chenna balls on it. You will see it float and increase in size. Now make a sugar syrup (sugar in water heated) and dip these balls, let it cool, your Rossogullas are ready, you can have them.
If you dip them in little sweetened thickened milk, place few cashew pcs & resins on top and refrigerate for an hour or so, you have the most yummy-licious Ras Malai.

Sambit BhattacharyaNo Sonia just ensure the chenna you take out from the cloth after squeezing out water, you spread it on a plate and further beat it with your fingers so that it's absolutely dry. Make the ball and keep it for awhile to dry.

Today I had a cooking disaster.
Was meant to be bright orange (carrot colour) carrot and almond ladoos! But due to misleading info on the recipe I was following, it ended chocolate brown. I will make this properly another time.

First I wanted to delete up the video I made. Then I thought of keeping it real.

It happens when we follow a recipe but the recipe doesn't contain valuable information. In this case, it just said roast almonds (roasted almonds with skin on ends up a dark brown colour which ruins the whole colour of the dish)! It was meant to say powdered white almond powder or skinless almonds or something. Well yeh so the disaster struck!!!

I thought that was way too much and was wondering how it would taste. Just used my judgement and lessened the quantity. However, I love the way you present your recipes with a video. Mini TanksalwallaMost recipes using nuts say roast the nuts to bring out the flavour. So just roast peeled almonds or cashews a pale gold colour. Other nuts can be rubbed after roasting to remove skin, e.g. walnuts, peanuts. Keep testing while roasting. As soon as the nuts are crisp, remove from toaster oven or pan. Rub off skins. Cool and use.

Print Recipe
Serves: 10 Cooking Time: 0-minutes
Ingredients
2 cups heavy whipping cream (cold)
1 (14-ounce) can sweetened condensed milk
2 teaspoons vanilla extract (I used Vain Indonesian Vanilla Extracted in Ginger Spirits!)
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 (5.1-ounce) package Original Cannoli Chips Cinnamon and Sugar Cannoli Chips, crushed into various sized pieces (approximately 2 cups)
Instructions

Line a loaf pan with parchment paper and set aside (unless you have reusable ice cream containers like I do--then use those!).

In the bowl of a stand mixer, affixed with the whisk attachment, add the heavy whipping cream. Whip the cream on medium-high speed until the cream thickens and you reach stiff peak status. You have stiff peaks when you can turn the whisk upside down, with the cream on it, and the peak still holds its shape. Do not over mix though. Or you get butter. Not what we are going for here.

Add the sweetened condensed milk, vanilla extract, ground cinnamon and ground nutmeg to the mixer. Mix on medium-high speed until all ingredients are incorporated and the mixture is thick. Remove the bowl from the mixer and fold in the cannoli chips.

Pour mixture into prepared loaf pan or ice cream containers. Cover the loaf pan with plastic wrap. Put ice cream in the freezer to set and freeze (preferably overnight).

Serve cold with the option to sprinkle on more cannoli chips and drizzle on caramel sauce right before serving.
Notes
Ice cream will stay fresh in the freezer, when properly stored, for 2-3 weeks.

Buttermilk pancakes are thick and spongy with less fat needed to achieve the softness.

Recipe type: Breakfast
Ingredients

2 cups self raising flour (if using plain flour add 1 teaspoon bicarb soda and 1 teaspoon baking powder)
ยพ teaspoon salt
2 eggs
2 tablespoon melted butter or oil
2 cups buttermilk

Instructions

Mix all dry ingredients together.
Beat the eggs and add melted butter or oil.
Add one cup of buttermilk to the eggs, mix well.
Pour buttermilk and eggs mixture into dry ingredients and mix all quickly into a thick batter with a whisk. By adding half the required liquid first the batter will be smooth and without clumps.
Now add the second cup of buttermilk and incorporate gently. Add more buttermilk if the batter is too thick.
At this stage you can add some corn, herbs, grated cheese or carrot for savoury or chopped fruit or berries for the sweet version.
Pour the batter into medium hot oiled pan or griddle โ€“ about ยผ of cup or more for larger pancakes. Cook as many at the time as you can fit in your pan without sticking together.
Turn over when bubbles appear on the top and cook the other side until golden.
Serve warm.

1 good chicken, cut into serving pieces, or use 8 to 10 leg pieces (drumsticks and thighs), trimmed of excess fat
Salt and pepper to taste
1 tablespoon curry powder

1. In a bowl, toss the chicken with salt, pepper, curry, allspice, garlic, chili, egg and 2 tablespoons water. When everything is combined, blend in the flour, using your hands. Keep mixing until most of the flour is blended with the other ingredients and the chicken is coated (add more water or flour if mixture is too thin or too dry; it should be dry but not powdery). Let sit while you heat the fat.
2. Choose a skillet or casserole at least 12 inches in diameter that can be covered. Add enough fat to come to a depth of about 1/2 inch and turn heat to medium-high. If you\'re using butter, skim any foam as it rises to the surface.
3. When the fat is hot (a pinch of flour will sizzle) raise heat to high. Slowly add chicken pieces to skillet (if you add them all at once, temperature will plummet). Cover skillet, reduce the heat to medium-high, and cook for 7 minutes.
4. Uncover the skillet, turn the chicken and continue to cook, uncovered, for another 7 minutes. Turn the chicken again and cook for about 5 minutes more, turning as necessary to ensure that both sides are golden brown.
5. Remove the chicken from skillet and drain on paper towels. Serve chicken at any temperature, with lemon or lime wedges.
