Oats Dates Burfi

Do you a sweet tooth and looking for a mild sweet without sugar.

Try Oats and Nuts burfi. Burfi is prepared with oats, nuts and dates. I have used dates for the sweetness and this is Zero sugar cake. Dates katli is a filling guilt free mid-morning and evening snacks.

Loaded with nuts and oats this is a healthy snacks for kids too.

Yogurt Total 2% 500 g Chocolate couverture with 70% cocoa, in small chunks 250 g Cream full 5 tbl. glucose syrup 75ml Tia Maria (liqueur) 75ml strong black coffee EXECUTION 200 g Mixed nuts, dried fruits and crushed cookies. Grease a form-tray, with a base of 25 cm, and bake it with baking paper. Melt in a refractory bowl, chocolate in a marinade. Remove it from the fire. In a saucepan, mix the coffee and Tia Maria and heat them in moderate heat. Once warmed up, remove it from the heat, add the glucose syrup and stir until it is completely dissolved. Put the coffee mix in the bowl of melted chocolate and stir. Add mixed nuts, dried fruits and crushed cookies. Slowly, gradually and alternately cream and yoghurt stirring until the ingredients are incorporated and you have a uniform mixture. Thoroughly mix and mix the mixture in the molding pan and place in the refrigerator for 12 hours to cool and stabilize well. When you are going to serve to turn your sweet on a cutting surface, divide it into 10 servings and serve it with a sprig of mint and a spoonful of yoghurt.

Goan Chonya doce ( Goan gram dal sweet)
Wash n soak 200gms dal for about 3 hrs. Pressure cook for 5 mins after the whistle with just enough water to cook it. Grind with water if any into a fine smooth thick paste. Transfer into a thick bottomed handi/dekchi .
Grind 1 1/2 coconut with minimum water into a fine paste. Add to the dal. Also add 400gms sugar, a pinch of salt .
Cook on medium heat, stirring continuously with a wooden spoon with a long handle. As it thickens it will start bubbling n spluttering. Keep stirring vigorously n continuously. After sometime it will start leaving the sides of the handi. Make sure the mixture does not stick or burn. Add 2-3 cardamoms made into powder n mix well.
It will get harder to stir but the idea is there should be no moisture n should start coming together to form a ball. Add 1 tbsp ghee n give a final stir.
Immediately toss onto a greased board n flatten with a rolling pin to about 1cm thickness. When warm to touch cut into triangular shapes. Allow to cool before serving or storing.

Today I had a cooking disaster.
Was meant to be bright orange (carrot colour) carrot and almond ladoos! But due to misleading info on the recipe I was following, it ended chocolate brown. I will make this properly another time.

First I wanted to delete up the video I made. Then I thought of keeping it real.

It happens when we follow a recipe but the recipe doesn't contain valuable information. In this case, it just said roast almonds (roasted almonds with skin on ends up a dark brown colour which ruins the whole colour of the dish)! It was meant to say powdered white almond powder or skinless almonds or something. Well yeh so the disaster struck!!!

2 cups all purpose flour
1/2 tsp baking soda
1/2 tsp Salt
3/4 cup unsalted butter melted and slightly cooled.
1cup packed brown sugar
1/2 cup white sugar
1tbs vanilla extract
1 egg
1egg yolk
((These three should be added in last by had or spatula.))
1/2 cup semolina
Dates and rasins.
Chocolate Chips 1 cup

Method
1.Preheat oven to 325 F
165°c line cookie trays with parchment paper
2.Shift together the flour baking soda and salt set aside
3. In a medium bowl cream together the melted butter. Brown sugar and white sugar until well blended.
Beat in the vanilla egg and yolk until light and creamy.
Mix in the shifted ingredients until just blended, stir in the chocolate chips by hand using a wodden spoon. *if butter was still hot when you added in your dry ingredients it might be really wet at this point. Let it rest at room temperature for a couple of minutes coz then it will be really cool enough to scoop into cookies*
4. Roll a big ball in your hands and separate into two balls equal half.
Rotate 90°and with jagged surfaces facing up, place formed dough onto cookie sheet trays
Bake for 15mins each time.

Not many books begin with the line "Ï am ashamed to have written this book" but the candid and humorous 'How to Cook and Eat in Chinese' first published in 1945 (now out of print) was written not by the author and home cook Buwei Yang Chao, a doctor by profession, who studied medicine in Tokyo and learnt to cook because she found Japanese food 'úneatable'. It was penned by her linguist husband who clearly favored the tongue and cheek. He coined many of the Chinese culinary terms that we use so often today. Among them are Pot sticker and stir fry first used in this cookbook, also possibly the first ever major Chinese cookbook in English.
2 months ago I found a rare first edition of this wonderful cookbook, a collaboration between a first generation Chinese couple and their second generation American daughter who made the United States their home at a time when Chinese culture was a complete mystery to most Americans.
The cookbook of 200 odd recipes was described as "an authentic account of the Chinese culinary system'' in the 1945 NY Times review but interestingly a comparison between Chao's Sour-Hot Soup and a Hot and Sour soup by Jamie Oliver or Martha Stewart reveals that some of Chao's recipes are much simpler than contemporary versions.
Chef Bruce Cost's Hot and Sour soup described as the real thing by Epicurious lays great emphasis on the use of lily buds and various mushrooms while Chao's recipe doesn't even mention these. Likely she omitted these because they would have been difficult to find in the United States in the 40's.
The book was written at a time when fresh ginger was so exotic Chao suggests using powdered ginger root instead. Most of her recipes äre mellow by today's standards and do not contain hot peppers.
Chao's recipe for Sweet-sour sauce fish another globally popular Chinese dish has fewer ingredients than say Martin Yan's version. Contemporary versions have some vegetables and fruits like bell peppers, pineapple and hot chilli.

Chao's recipe calls for a whole fish, I used cubed Mahi Mahi. This sweet and sour sauce can be used with tofu, noodles, chicken and other kinds of meat as well.

Buttermilk pancakes are thick and spongy with less fat needed to achieve the softness.
Author: Vesna - Make Bread
Recipe type: Breakfast
Ingredients

2 cups self raising flour (if using plain flour add 1 teaspoon bicarb soda and 1 teaspoon baking powder)
¾ teaspoon salt
2 eggs
2 tablespoon melted butter or oil
2 cups buttermilk

Instructions

Mix all dry ingredients together.
Beat the eggs and add melted butter or oil.
Add one cup of buttermilk to the eggs, mix well.
Pour buttermilk and eggs mixture into dry ingredients and mix all quickly into a thick batter with a whisk. By adding half the required liquid first the batter will be smooth and without clumps.
Now add the second cup of buttermilk and incorporate gently. Add more buttermilk if the batter is too thick.
At this stage you can add some corn, herbs, grated cheese or carrot for savoury or chopped fruit or berries for the sweet version.
Pour the batter into medium hot oiled pan or griddle – about ¼ of cup or more for larger pancakes. Cook as many at the time as you can fit in your pan without sticking together.
Turn over when bubbles appear on the top and cook the other side until golden.
Serve warm.

Delicious 😉 Spicy Supercrunchy Fried Chicken <3

Ingredients

1 good chicken, cut into serving pieces, or use 8 to 10 leg pieces (drumsticks and thighs), trimmed of excess fat
Salt and pepper to taste
1 tablespoon curry powder
1/2 teaspoon ground allspice
2 tablespoons minced garlic
1 Scotch bonnet (habanero), or other fresh chili, stemmed, seeded and minced, or cayenne to taste, optional
1 egg
1 cup flour
A mixture of lard and butter, as needed, or olive oil, or neutral oil like corn or grapeseed
Lemon or lime wedges for garnish

Method

1. In a bowl, toss the chicken with salt, pepper, curry, allspice, garlic, chili, egg and 2 tablespoons water. When everything is combined, blend in the flour, using your hands. Keep mixing until most of the flour is blended with the other ingredients and the chicken is coated (add more water or flour if mixture is too thin or too dry; it should be dry but not powdery). Let sit while you heat the fat.
2. Choose a skillet or casserole at least 12 inches in diameter that can be covered. Add enough fat to come to a depth of about 1/2 inch and turn heat to medium-high. If you\'re using butter, skim any foam as it rises to the surface.
3. When the fat is hot (a pinch of flour will sizzle) raise heat to high. Slowly add chicken pieces to skillet (if you add them all at once, temperature will plummet). Cover skillet, reduce the heat to medium-high, and cook for 7 minutes.
4. Uncover the skillet, turn the chicken and continue to cook, uncovered, for another 7 minutes. Turn the chicken again and cook for about 5 minutes more, turning as necessary to ensure that both sides are golden brown.
5. Remove the chicken from skillet and drain on paper towels. Serve chicken at any temperature, with lemon or lime wedges.
