Though the main theme of this group is food, Euphoric Delights is not just a 'food and recipe' group. It is a place to connect, mingle and share. As many of you may have noticed, the group structure is open and fluid. When we go to a restaurant, we don’t just eat. We make it conversations, we share experiences, and we talk, about everything under the sun. That’s how we make merry. We see this group to be the same way.

A place where people can chat, make friends, make queries, ask questions that are not just about food and share one’s point of view. It's perfectly okay to go off topic. Ask/ talk about anything that is on your mind. But please keep the following guidelines in mind.

1) NO ADS, PROMOTIONS OR SPAM of any kind, please. (Direct/ or indirect via inboxing etc) It's annoying and tacky. Those posts will be deleted and the people, removed from the group without prior warning. The group is a commercial free group. Please do not treat this group as a mailing list or a database for advertising for your business/events etc. All posts carrying any kind of promotions (even if in the comment section) will deleted. Posts asking for “likes/votes / petition signing etc. are counted as promotional. This place is about community, not commercialism.

These posts will be deleted and repeat posters will be banned. All photographs may contain blog links addresses (URL) or the member’s name as watermark.
However, if a business name or a FB page information is posted as watermark on pictures, they will be counted as indirect promotions and deleted.

5) Please include # tags like

etc,for people to be able to search your recipe easily.
Use the search option (pictures below) using keywords to look up previously posted information. If you are looking for a particular recipe. The search option is really helpful. Simply type the keywords.

You are welcome to share food pictures without recipes too, on this forum. However, if someone asks for a recipe, it is polite to answer them. Please also include tags like #EDRecipeIncluded #EDRecipenotincluded to set the expectations of members interested in your post for recipe. If you are interested in following a post, simply turn the notifications of the post on.

6) Please refrain from over posting on the group. Unless an issue of extreme importance (seeking help) comes up, please stick to making one post per day. Please do not make repeat posts. Try to bump the post made earlier if there are no responses. Or delete the first one before posting another.
Please also learn to use the search option. Sometimes, you can find the answer to the question even before you ask!

7) Please remember, this is an OPEN group and intends to be that way. Please exercise caution about not posting extremely personal details on a large forum like this one. Please also be informed about the possible dangers of adding strangers from a group ( or anywhere else) as friends on your personal profile. Keep yourself safe. Shalini RamachandranIf you want to help other members searching for a recipe, to find yours, using of Hashtags can be extremely helpful. This helps people find posts about topics they’re interested in. To make a hashtag, write # (the number sign) along with ‘ED’ in the beginning and a keyword or phrase (written as one word) and add it to your post. For example: #EDRecipe #EDVegetarian #EDEntree #EDDessert#EDAppetizer#EDFusion #EDIndoChinese #EDIndian#EDPotato#EDShaliniRamachandran When you click on a hashtag, you’ll see a feed of posts that include that hashtag. You'll also see some related hashtags at the top. You can search for a hashtag using the search bar at the top of any page. The more you use these, the more your posts will show up in searches. You can also edit the previous posts you have made, to include the HastTags by simply clicking on the ‘Edit Post’ feature. See pic below. This will help make searching of recipes easier.

Rema SureshSwati look on top there is a magnifying glass before euphoric delights. If you search there you will get all the posts with those filtered words.It will at least narrow your search if you are not near a pc. Hope this helps.

Also, i canot locate an app called as 'facebook group' for ipad. Maybe I need a coffee!!! 😉 It would be great to have the button on ipad...coz i am more on it than my laptop. Bread Gulab Jamun Recipe | Dry Gulab Jamun Recipe

This Bread Gulab Jamun Recipe is the last post I am sharing in Diwali series, as everyone will be busy in shopping, preparing sweets, snacks and be filled with excitement, so a short intro. We need not run to buy readymade jamun packets, if you have some loaf of bread left back in your kitchen, then do try this, it taste delicious and different from regular ones. If you want to gift pack these jamuns, then make it as dry gulab jamun recipe, I have given the method below.

Makes : 10 to 12 Jamuns

Ingredients
------------------------
Bread Slices – 5
Milk – 1/4 cup
All purpose flour / Milk powder – 2 tbsp
Cooking Soda – 1 pinch
Oil / Ghee – For deep frying

For the Sugar Syrup
------------------------
Sugar – 1/4 cup
Water – 1/4 cup
Cardamom – 2 pods
Saffron – Few strands
Rose Essence – 1 Drop (optional)

Method
------------------------
1. First measure and keep all the ingredients ready. Trim the sides of the bread. To a bowl, pour 1/4 cup of milk and soak the bread slices.

2. Squeeze the bread slices to remove excess milk. Then mash the bread well (After squeezing the milk, you can grind the bread in a mixer also).

3. Now add all purpose flour and cooking soda. Knead the dough very gently, only with your fingers. Just knead it slightly to form a smooth dough. If the dough is sticky, then add little APF more, set aside for 5 minutes.

4. Pinch a small portion of the dough, apply little ghee / oil on your palms and roll it into small sized balls. Don’t make the balls bigger, as it increase in size. Roll it smoothly without any cracks.

5. Side by side prepare the sugar syrup. Add sugar, water, cardamom and saffron strands in a wide vessel. Boil it for 7 to 8 minutes, until sugar dissolves completely. Stir occasionally till it becomes slightly thick not string consistency. Switch off flame and add rose essence.

6. Heat oil in a pan, when the oil is hot enough, drop few balls carefully. Fry the balls in medium flame only, else it wont get cooked inside. Flip the balls gently and fry on all sides. Adjust the flame accordingly. Add the jamun’s to the warm sugar syrup and not very hot syrup, as it shrinks. The jamun’s absorb the sugar syrup very soon and give atleast 2 hours soaking time.

7. If making dry jamun, take the jamun’s out of the sugar syrup, after 1 hour. Drain it in a plate for 10 minutes and roll it over powdered sugar / dessicated coconut as per desire.

Enjoy this dry jamun with Kara Boondhi.

This Diwali Marunthu Recipe is a special type of ayurveda or siddha medicine made with the common spices/herbs used in our regular cooking. On the day of Diwali, after doing pooja in the early morning, with sweets, new clothes, crackers etc, 1 tsp of this marunthu, is given in empty stomach after oil bath rituals. It gives relief from the bloating feel, after eating high calorie sweets and oily snacks. Not only on the day of Diwali, this Deepavali Legiyam Recipe can be had regularly which aids digestion and help us to stay fit. In the authentic version, even long pepper - Kandathippili, finger root - chitharathai, cashew, almonds and honey is also used.

Recipe Cuisine : South Indian
Recipe Category: Homemade / Marundhu
Preparation + Cook Time : 25 Mins
Makes : 3 /4 Cups

Ingredients
------------------
Coriander Seeds - 2 tbsp
Jeera / Cumin seeds - 1 tsp
Pepper Corns - 1 tsp
Ajwain Seeds / Omam - 1 tsp
Khus Khus / Poppy Seeds - 1 tsp
Dry Ginger Powder / Sukku - 1/4 tsp / 1' piece
Cardamom - 1
Cinnamon / Clove / Nutmeg - 1 piece (optional)
Jaggery - 1/2 cup
Ghee / Gingelly Oil - 1.5 tbsp

Method
------------------
1. First measure and keep all the ingredients ready.

2. In a pan, add coriander seeds, jeera, pepper, khus khus, ajwain, cardamom and dry ginger. Dry roast it in low flame for 2 minutes without changing the colour (I used dry ginger powder). Let it cool down.

3. Transfer it to a mixer and grind it to smooth / coarse powder as per preference. If you prefer smooth finish, sieve it once.

4. Take jaggery in a pan and pour water just immersing level. Boil it in low flame, till the jaggery dissolves completely.

5. Strain the jaggery water to remove impurities. Boil it again for 2 minutes until bubbles appear.

6. Now add the grinded powder and mix continously in low flame.

7. It takes around 10 to 12 minutes and now the mixture reduces in quantity. When it becomes frothy, add ghee / oil at regular intervals and stir till it leaves the sides of the pan. : For the base
.4 piece diegestive biscuit,
4 dates pitted,
4 tbs room temperature butter.
grind tgether and press it in a small circular mould.

❄🦋🦋🦋: For the filling.

2 piece kiri square cheese
,2 tbs icing sugar
,4 tbs condensed milk
,beat well to get a smooth paste,add half cup whipped cream and 2 dates choped one tbs chopped hezulnut .fold gently .remove cheese cake base from the mould and fill the cheese mix.keep refrigerate.

❄🦋🦋🦋: For topping melt 1/2 cup of white chocolate and fold it with little whipped cream and pipe it top of the cheese cake...sprinkle some pistachios and serve.

Baked these Chocolate Nutela Muffins-Its Diwali...the right time for indulging in your sweet tooth. Baked these to give away to my Hindu neighbors-My little gesture of gratitude 😋
Recipe
180 gms brown sugar
50 gms cocoa
1tsp baking soda and 1/2 tsp baking powder
Buttermilk
130 gms melted butter
1.egg
Nutela
Pinch of salt
Method
Mix all the dry ingredients together and give it a good stir, add the melted butter and the egg and finally the buttermilk
Preheat oven at 250 degree for 10 minutes
Place in your cupcake moulds and turn the heat to 250 degree for 7 minutes, lower the heat to 200 degrees and bake for another 10 minutes
Let it cool on the rack and add dollop of nutella on it.
Note-yoy need to get the cracks on top of your muffin

HING KACHAURI WITH ALOO PARWAL DUM...
(Bengali Style)

Recipe:
To make the stuffing for the Kachauri, soak urad dal in water for a couple of hours or overnight. Then sieve the dal & grind it to a paste. Heat some white oil or ghee in a kadhai & temper with saunf (aniseeds) & a generous amount of asafoetida & then add a paste of saunf & ginger.. Fry it for a while & then the dal paste. Keep sauteeing it & then add red chilly powder, salt & a bit of sugar. This is a Bengali recipe, which tastes slightly sweetish. Keep frying till the dal paste starts leaving the sides of the kadhai. Take it off the fire & cool it room temp.
To make the kachauris, make a dough with all purpose flour to which a pinch of salt & some oil has been added. You may add a bit of hing dissolved in water while making the dough. This gives a nice aroma & extra flavour to the kachauris. Rest the dough for 10 - 15 mins. Make lemon sized balls from the dough, flatten them slightly & fill them with a portion of the filling. Pull together the sides, form balls & roll then like poories & fry them in hot oil. Drain the extra oil on absorbent paper & serve hot with aloo pareal dum, simple aloi dum, or a chana dal or simply with a pickle...

To make the aloo parwal dum, peel & cut the veggies into half, apply salt & fry them & keep aside. Heat some more oil & a bit of ghee in a kadhai & temper with green cardamom & cinnamon & a bayleaf. Add ginger paste, sautee for a while & then add a paste of jeera & dhaniya followed by red chilly powder, turmeric powder & some Kashmiri chilly pwdr for colour. Fry these masalas on medium heat till it starts leaving the sides of the wok. Add the fried aloo & parwal. Fry. After a while add some curd & keep frying well till oil separates out from the masala again. Add water, salt & sugar. Cook till the vegetables are cooked through.... Serve as an accompaniment with kachauris...

Thought I’d be brave and share again. One of my late Mum’s chutneys!! Miss her fab cooking. Luckily I learned a few things of her. Here goes.
Sweet Spicy n Tangy Raw Mango Chutney

Recipe
2-3 tbsp oil
1Tsp Panch Phoran
1 tbsp Turmeric
1 1/2 tbsp red chilly Pdr
1/2 tsp cumin Pdr
2kg Raw mangoes peeled and cubed
350 gms of jaggery ( cut into small pieces)
1 cup of vinegar ( I used apple cider vinegar)
Salt to taste.

Heat oil add panch phoran. Once it starts to crackle lower heat and add turmeric salt chilly and 1/2 the vinegar.
Cook for a minute and add jaggery let it start to break down and become gooey.
Now add Raw Mango and mix it into the spice mix in the pan.
Add balance of vinegar and let it simmer till mangoes become soft and a little mushy and the sauce thickens. Careful not to let it burns.
Takes approx 35-45 mins to cook.
Cool and put in a jar. Keep refrigerated.
PS mine does not last long enough for me to keep refrigerated. Demolished in no time.

Yellappa is a traditional sweet dish prepared in the Udupi region. It is prepared the evening before Naraka Chathurdhashi for naivedhyam. Basically this sweet is prepared using soaked rice, grated coconut and jaggery. A thick batter is made using all these ingredients and is deep-fried. But nowadays we all have become so health conscious that we prefer deep-fried food very rarely. Serves: 10 Cooking Time: 0-minutes
Ingredients
2 cups heavy whipping cream (cold)
1 (14-ounce) can sweetened condensed milk
2 teaspoons vanilla extract (I used Vain Indonesian Vanilla Extracted in Ginger Spirits!)
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 (5.1-ounce) package Original Cannoli Chips Cinnamon and Sugar Cannoli Chips, crushed into various sized pieces (approximately 2 cups)
Instructions

Line a loaf pan with parchment paper and set aside (unless you have reusable ice cream containers like I do--then use those!).

In the bowl of a stand mixer, affixed with the whisk attachment, add the heavy whipping cream. Whip the cream on medium-high speed until the cream thickens and you reach stiff peak status. You have stiff peaks when you can turn the whisk upside down, with the cream on it, and the peak still holds its shape. Do not over mix though. Or you get butter. Not what we are going for here.

Add the sweetened condensed milk, vanilla extract, ground cinnamon and ground nutmeg to the mixer. Mix on medium-high speed until all ingredients are incorporated and the mixture is thick. Remove the bowl from the mixer and fold in the cannoli chips.

Pour mixture into prepared loaf pan or ice cream containers. Cover the loaf pan with plastic wrap. Put ice cream in the freezer to set and freeze (preferably overnight).

Serve cold with the option to sprinkle on more cannoli chips and drizzle on caramel sauce right before serving.
Notes
Ice cream will stay fresh in the freezer, when properly stored, for 2-3 weeks.

Buttermilk pancakes are thick and spongy with less fat needed to achieve the softness.

Recipe type: Breakfast
Ingredients

2 cups self raising flour (if using plain flour add 1 teaspoon bicarb soda and 1 teaspoon baking powder)
¾ teaspoon salt
2 eggs
2 tablespoon melted butter or oil
2 cups buttermilk

Instructions

Mix all dry ingredients together.
Beat the eggs and add melted butter or oil.
Add one cup of buttermilk to the eggs, mix well.
Pour buttermilk and eggs mixture into dry ingredients and mix all quickly into a thick batter with a whisk. By adding half the required liquid first the batter will be smooth and without clumps.
Now add the second cup of buttermilk and incorporate gently. Add more buttermilk if the batter is too thick.
At this stage you can add some corn, herbs, grated cheese or carrot for savoury or chopped fruit or berries for the sweet version.
Pour the batter into medium hot oiled pan or griddle – about ¼ of cup or more for larger pancakes. Cook as many at the time as you can fit in your pan without sticking together.
Turn over when bubbles appear on the top and cook the other side until golden.
Serve warm.

Delicious 😉 Spicy Supercrunchy Fried Chicken <3

Ingredients

1 good chicken, cut into serving pieces, or use 8 to 10 leg pieces (drumsticks and thighs), trimmed of excess fat
Salt and pepper to taste
1 tablespoon curry powder
1/2 teaspoon ground allspice
2 tablespoons minced garlic
1 Scotch bonnet (habanero), or other fresh chili, stemmed, seeded and minced, or cayenne to taste, optional
1 egg
1 cup flour
A mixture of lard and butter, as needed, or olive oil, or neutral oil like corn or grapeseed
Lemon or lime wedges for garnish

Method

1. In a bowl, toss the chicken with salt, pepper, curry, allspice, garlic, chili, egg and 2 tablespoons water. When everything is combined, blend in the flour, using your hands. Keep mixing until most of the flour is blended with the other ingredients and the chicken is coated (add more water or flour if mixture is too thin or too dry; it should be dry but not powdery). Let sit while you heat the fat.
2. Choose a skillet or casserole at least 12 inches in diameter that can be covered. Add enough fat to come to a depth of about 1/2 inch and turn heat to medium-high. If you\'re using butter, skim any foam as it rises to the surface.
3. When the fat is hot (a pinch of flour will sizzle) raise heat to high. Slowly add chicken pieces to skillet (if you add them all at once, temperature will plummet). Cover skillet, reduce the heat to medium-high, and cook for 7 minutes.
4. Uncover the skillet, turn the chicken and continue to cook, uncovered, for another 7 minutes. Turn the chicken again and cook for about 5 minutes more, turning as necessary to ensure that both sides are golden brown.
5. Remove the chicken from skillet and drain on paper towels. Serve chicken at any temperature, with lemon or lime wedges.

Karva Chauth is a ritual of fasting by the married Hindu women for the well being, longevity and prosperity of their husbands. The one day festival is more popular in Northern States of India , where married women fast from sunrise to moon rise. The festival falls on the fourth day after the full moon, in the Hindu lunisolar calendar month of Kartik. The fast begins at dawn. Fasting women do not eat or drink during the day and open the fast after worshiping the moon at night. Many traditional food items are prepared for the occasion. Mathri being one of them.

Meethi Mathris are deep fried Punjabi sweet snack made from refined flour and sugar syrup.To make them a guilt free affair, i have used whole wheat flour and baked them. Did i say the these sweet treats are refined sugar free too, as i have added little jaggery powder to the flour before kneading the mathri dough. The baked mathri turned out flaky, crispy, mildly sweet in taste. The crackers can be flavored with sesame seeds or fennel seeds. These mathri serve as a perfect time accompaniment. They can also be had as guilt free mid day snack. It can be prepared ahead of time and stay good for about 15 days in an airtight container, provided they last until then.
