I did it ladies...I made 60 items for amma's 60th b-day. She was so thrilled.
*****Update: I have been planning for the last six days, and worked on it for about 90 mins a day when she goes for a walk. I used most of the vegetables I get in my backyard, snake gourd, ridge gourd, Lemon cucumber, sorrel/gongura leaves, amarnath leaves, methi leaves, egg plant and beans.Banana leaf is also from my back yard.
I have made mango/sooji cake my aunt recipe. The below is the list of the items I made.

Nothing can be more satisfying than using fresh home made paneer in a simple yet a delightful dish๐Ÿ˜‹๐Ÿ˜‹๐Ÿ‘๐Ÿ‘... loved by all in my family ๐Ÿ˜๐Ÿ˜‹PALAK BHURJI with PANEER โ˜˜๏ธโ˜˜๏ธ๐Ÿฒ๐Ÿฒ
Recipe:
Palak- 1 big bunch nicely washed and chopped roughly
Onions-2 cut into big chunks (diced)or chopped
Tomatoes-2 cut into big pieces
Garlic- 3-4 cloves chopped
Paneer-200 gms cut into cubes (Iโ€™ve used fresh homemade paneer ๐Ÿ˜๐Ÿ˜๐Ÿ‘Œ๐Ÿ‘Œ)
Method:
In a kadhai ( I prefer to use lohe ki kadhai to make all my greens... it enhances the nutritional value of the dish๐Ÿ˜Š๐Ÿ‘but it's not a compulsion!!! You may use any pan of your choice).. add 2 tablespoons of oil and splutter some jeera in it. Now add the onions and garlic. Sautรฉ till just transparent and then add the tomatoes and give it a stir. Don't overcook the tomatoes too. Add the chopped palak and cook for just about 2 minutes or till it wilts.Now add the dry masalas-salt/ chilli powder/ coriander powder/garam masala and huldi (this is optional). Mix well and add the paneer pieces and give a gentle stir. Now immediately transfer into some steel or glass bowl to avoid discolouration of the lovely green palak. Finally The End ๐ŸŒ• reposting an earlier post of mine as is...
The only difference today was i used 2 ltrs of milk and boiled it well with cream in it. I increased the cream quantity too a little more. Switched the gas off and then started the additions one by one..i read in a post online that overheating hardens the final result..
๐ŸŒ™ Home made paneer in my experience definitely tastes different than store bought and is not as soft as that...but is soft enough
๐ŸŒ™ Also it gets a bit hard once kept in fridge..but once heated in a gravy or fried or pan roasted it softens up..

Ok now till I dont perfect the paneer making process ill be restless...
Today my 2nd try..
With all 3..lime vinegar n curd

Ive used
1.5 ltrs of milk
125 ml cream..ive used Amul tetra pack
1 cup curd
Juice of 2 lemons
1 tbsp vinegar
Some salt if want to eat it raw..

I have taken previously boiled milk.
just reheated for a few mins and added cream. Stirred it well and added curd. In a few mins started adding the lemon juice spoon by spoon. Finally added the vinegar 1 tbsp at a time and salt and switched off the gas after 5 mins.
This looks a little different than when we use only lime juice.
Strained it in a muslin cloth and squeezed out the water. Poured slightly cold water (not chilled) on the paneer and squeezed out that water too. It removes the vinegar taste. Let the strained paneer remain in the muslin cloth itself. Let it remain round or fold it in a square. I placed my marble rolling board..the one i use for rolling rotis on the folded muslin cloth. It helps to squeze out any remaining whey and gives it a nice shape.

Also yesterday i read that over boiling after all the curd lime n vinegar is added makes the paneer hard...so i avoided that today..once i saw the whey n chenna separated i switched off the gas. Waited for 5 to 7 mins and then strained it.
Removed it from the muslin cloth after 25 mins or so..it was done.
I have saved some of the whey squeezed out before adding cold water. Will use to knead dough and make gravy.

Thanks to many members who have posted various suggestions that i found in my search yesterday..i read many posts on the same..

My breakfast today....paneer parathas with a dollop of dahi and a glass of fresh carrot, beetroot, kinnu juice. I added chopped methi leaves and half a cup of besan to my atta. It's more delicious and makes crisp parathas ๐Ÿ˜Š๐Ÿ˜
The juice is from my slow juicer and has most of the pulp in the juice so it's definitely more healthy with lots of roughage.

This recipe is made with instant red gravy premix powder. I was initially a bit sceptical as to whether or not it will match the taste made with fresh ingredients.
