Made Paneer Mastani for dinner.

Here is the Recipe.

Ingredients for Tomato Gravy

2 Tomatoes
2 teaspoon Garlic Ginger paste
1 teaspoon Salt (according to taste)
1 teaspoon Sugar
1 tbs Garam Masala Powder
1teaspoon turmeric
1 teaspoon red chilly powder
½ teaspoon coriander powder
1 teaspoon Cumin Powder
2 Onions (chopped)
1 tbs Butter
Khara Garama Masala (Cardamom, cloves, bay leaves, cinnamon stick)

Ingredients for Cashew and Almond Gravy
½ cup Cashew
½ cup Almond
1 tbs Poppy Seeds
2 teaspoon Garlic Ginger paste
1 tbs Curd
1 tbs Cream
1-2 Green Chili (chopped)
Salt according to taste
1 cup Milk
1 tbs Butter
1 teaspoon Ghee
1-2 Onion (chopped)
Ingredients to Marinate
200gms paneer cut into thick slices
1 teaspoon hung Curd
1 teaspoon Cream
Few Dry Mint Leaves
Salt as per taste
1 teaspoon Ginger and Garlic Paste
1 pinch Turmeric Powder
1 teaspoon Red Chili Powder
Directions
• Take a bowl marinate paneer with all ingredient mentioned above and keep it aside for 10 mins
Heat tawa and add 1 tablespoon butter and roast paneer very gently both side
• Method for tomato gravy
Add 1 teaspoon butter in open pan and roast tomato, onion, ginger and garlic for 5 minutes
Once they are cold, grind them in mixer grinder
Heat oil in an open pan and put butter and add all khara
garam masala then add the grinded paste and roast for 5 minutes
Add turmeric,red chilly powder, coriander powder, salt and sugar and keep on low flame so it roasts properly
Once it’s done then add less than ½ cup water and keep low flame
Boil for minute or two then switch off the gas and keep it aside
• Method for Almond and Cashew Gravy
Roast cashew, almond and poppy seeds in a pan for 2 minutes and then soak them in milk for 10 minutes
Put this in a grinder and make paste
In a pan heat butter, add chopped onion, ginger, garlic and green chili and roast for 2 minutes
Add dry fruits paste and keep on low flame
Then add salt, cream, curd and mix well keeping it on low flame only
Then add cumin powder and garam masala powder and once it’s done add 3 to 4 tbs milk / water (make sure gravy is semi thick)
Then add ghee and keep for 1 minute on low flame
Now your gravy is ready
Serve
Take square size bowl or a plate and one side pour tomato gravy and on the other side almond and cashew gravy and on top of it keep paneer pieces
Garnish with cream and coriander leaves

Usual weekend life of bachelors at on-site- we plan for lunch at anyone's place... This time it was my house..

Me and my flatmate prepared this today..
- Started with Oreo Ice cream
- Appetizer- Vada, onion bhajji, coconut chutney

Made after ages... as no body is very fond of Chole in my family but I wanted to hve so😝😝.....Sunday special lunch was PINDI CHOLE(Chana) and AJWAIN POORIS😋😋👌👌❤️❤️
Recipe :
Kabuli chana -2 katori
Chana dal-1/2 katori
Roasted jeera powder -2 tablespoons
Anaardana powder-1 tablespoon
Dhania powder -1tsblespoon
Ginger juliennes-2 inch piece julienned or as much as you want
2 tablespoons oil
Jeera-1 tsp
Jaggary -a bit
Salt/ chilly powder as per your taste
Tea-2 tsps
----
Method -
Soak the chole and chana dal together overnight. Now pressure cook them together adding tea leaves straight into the Choley. ..yes you heard it right! !! No tea water ..direct tea leaves into the cooker. Add 2 inch piece of daalchini / salt and enough water just about 1 inch above the Choley to cover them . Give one whistle on high and cook on low for 10-15 minutes .Once done just check if cooked properly and give a nice stir so that the dal mashes well and gives a nice base and consistency to the Choley.
Now in an IRON kadhai take oil and add jeera. When spluttering add ginger juliennes and fry till golden. Switch off gas and add roasted jeera powder / Anaardana powder / chill powder and dhania powder and mix well .Reason for adding in off flame is we don't want the masalas to burn at all. Now add the boiled Choley and switch on gas.Add a small bit of jaggary and mix well. Check salt and adjust as per your taste 😊👍Simmer for a couple of minutes and you can adjust the gravy also as per your liking. Done ✅ 😊Let it stand in the kadhai for half an hour to get more colour. Don't worry. ..its going to increase the nutritional value only in the iron kadhai so relax😅😅 Finally for the presentation (optional ) you may put a tempering of dry red chilli and a bit of jeera in oil. Serve hot with pooris / Bhaturas or pavs😉ENJOY👍❤
NOTE:
The 3 main tricks of getting this color. .
••Put tea leaves direct in water...nothing to worry
••Use Anaardana for khataai
••Lastly but most importantly use an iron kadhai for cooking and let it stand in it for sometime

CHICKEN AND EGG CURRY 👍😋😋ready to be eaten with garma garam steamed rice👌✌️✌️
500 gms chicken (with bones)
2 onions made into paste
1 heaped tablespoon ginger garlic paste
2 tomatoes puréed
1 tablespoon mixed Whole masalas-cinnamon/ pepper/cloves/jeera/ green cardamom
3 tablespoons oil
In a non stick pan heat the oil and add all the whole masalas. Let it splutter then add the onions paste and the ginger garlic paste. Sauté till golden and then add the puréed tomatoes. Bhuno nicely till oil seperates. Then add all the dry spices- salt/huldi/coriander powder and chilli powder as per your taste. Mix well into the masala.
Add the chicken pieces and mix well into the masala and bhuno well till a light colour comes on the chicken and oil seperates. Add desired amount of water and cover and cook till chicken is tender and cooked well. Add boiled eggs and serve hot with steamed rice🍛🍗🥚👍😋

Delicious 😉 Spicy Supercrunchy Fried Chicken <3

Ingredients

1 good chicken, cut into serving pieces, or use 8 to 10 leg pieces (drumsticks and thighs), trimmed of excess fat
Salt and pepper to taste
1 tablespoon curry powder
1/2 teaspoon ground allspice
2 tablespoons minced garlic
1 Scotch bonnet (habanero), or other fresh chili, stemmed, seeded and minced, or cayenne to taste, optional
1 egg
1 cup flour
A mixture of lard and butter, as needed, or olive oil, or neutral oil like corn or grapeseed
Lemon or lime wedges for garnish

Method

1. In a bowl, toss the chicken with salt, pepper, curry, allspice, garlic, chili, egg and 2 tablespoons water. When everything is combined, blend in the flour, using your hands. Keep mixing until most of the flour is blended with the other ingredients and the chicken is coated (add more water or flour if mixture is too thin or too dry; it should be dry but not powdery). Let sit while you heat the fat.
2. Choose a skillet or casserole at least 12 inches in diameter that can be covered. Add enough fat to come to a depth of about 1/2 inch and turn heat to medium-high. If you\'re using butter, skim any foam as it rises to the surface.
3. When the fat is hot (a pinch of flour will sizzle) raise heat to high. Slowly add chicken pieces to skillet (if you add them all at once, temperature will plummet). Cover skillet, reduce the heat to medium-high, and cook for 7 minutes.
4. Uncover the skillet, turn the chicken and continue to cook, uncovered, for another 7 minutes. Turn the chicken again and cook for about 5 minutes more, turning as necessary to ensure that both sides are golden brown.
5. Remove the chicken from skillet and drain on paper towels. Serve chicken at any temperature, with lemon or lime wedges.

Delicious 😉 Chili in Bread Bowls Recipe <3

Ingredients

1 tablespoon all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 pound each beef stew meat, boneless skinless chicken breast and boneless pork, cut into cubes
1 tablespoon canola oil
1 medium onion, chopped
1 medium green pepper, chopped
1 jalapeno pepper, seeded and chopped
1 can (28 ounces) diced tomatoes, drained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/2 ounces) navy beans or great northern beans, rinsed and drained
1 can (8 ounces) tomato sauce
1 tablespoon chili powder
1 garlic clove, minced
1-1/2 teaspoons ground cumin
1/2 teaspoon dried basil
1/4 to 1/2 teaspoon cayenne pepper
9 large hard rolls
Sour cream, chopped green onions and sweet red pepper, optional

Directions
In a large resealable plastic bag, combine the flour, salt and pepper. Add meat in batches; toss to coat. In a large skillet, brown meat in oil in batches. Transfer to a 5-qt. slow cooker with a slotted spoon. Stir in onion, peppers, tomatoes, beans, tomato sauce and
seasonings. Cover and cook on low for 7-8 hours or until the meat is tender.
Cut tops off rolls; carefully hollow out bottom halves. Spoon about 1 cup of chili into each roll. Garnish with sour cream, onions and red pepper if desired. Yield: 9 servings.
