Once some Prime Minister of India visited Jammu (J&K) and Kaladi was served to him in dinner. He liked it this much that he told his chefs to learn the recipe and while going back to Delhi, he got lots of Kaladis packed for his family.

Also, this fact speaks about the royalty of this Kaladi that a renowned chef 'Sanjeev Kapoor' when last visited to Jammu in 2014 with his wife, he cherished Kaladi (usually served with Kulcha) on roadside and also shared the pictures on his social media account.

With these stories, you can well imagine the richness of this amazing Street food of Jammu, which is no where available/made in the world.

Dal Ki Dulhan
Essentially, this dish is typical to U.P and Bihar. A one-pot meal….I’d call it as another version of Dal-Roti if you must! Dal ki Dulhan is nothing but mildly seasoned whole-wheat flour dumplings in a garlic flavoured, achaari dal with an aromatic Tadka (tempering) of ghee and hing (asafoetida). Yes, you got that right… achaari dal ☺️..It’s served on it’s own or with sliced onions and more ghee on the top…or you can have it just like a soup…a very rustic, desi soup!

Just made the authentic Hyderabadi guthivankaya and bagara rice combo for dinner.

Recipe for the guthivankaya curry: first of all dry roast peanuts, sesame seeds, and dry coconut keep it aside. Second cut half onion, one spoon coriander, methi seeds, pepper, jeera 4red chilies and three green chilies, depending on your choice of spiciness. Mean time soak a bit of tamarind. Put all the above in the mixie and keep it aside. Now put a bit of oil in a wok and fry the egg plants in it for fifteen mins. If you like onions you can cut onions very small and fry until brown and then garlic ginger paste, curry leaves, hing, and then the masala with the tamarind water and let it boil for like ten mins and then put the egg plants in it and reduce the flame and leave it for twenty mins at least your yummy curry will be ready. Time taking but worth it😀 hope it comes out well.

Sandhya Vyasयहां का लोकल फूड, इस संपूर्ण डीश को "तावो" कहते हैं । वैसे तो यह एक माताजीका नैवेद्य भोग है । पर इसको वीक एन्ड पार्टी हो, फार्म हाउस या फेकटरीस में गैट टु गैधर में यह मेन्यू बहुत चलता है । इसमें जो पुरी जैसी दिखती है उसे "चापडी" कहते हैं और उसके साथ मिली जुली सब्जियों का ग्रेवी वाला शाक जिसे "उंधियु" कहते हैं ।(आम उंधियु से इसमें बहोत सारी ग्रेवी होती है) । तो लिजिए चापडी बनाने की रीत :- सामग्री - 1 बडा बाउल गेहूँका मोटा आटा, अजवाइन, जीरा, तिल, हींग, नमक, चुटकी भर सोडा बाय कार्ब, मोयन के लिलि 2 टे.स्पून तेल, गुनगुने पानी से सख्त आटा गूंदे । थोडी देर रेस्ट दे। बादमें हाथ से आटे का गूल्ला ले के अचछी तरह दबादबाढाई-तीन ईंच गोलाई की पुडी जैसा बना ले, उसे स्लो गैस पे तेल में गोल्डन ब्राउन होने तक तल ले । सब्जी- मिली जौली सब्जी जैसे बैंगन, आलू, मटर, लोबिया फली, फूलगोभी, मटर, गवार, फ्रांसबीन, जो आपकी पसंद तेल मे सब अपने तरीके से पका लें। ग्रेवी के लिए अदरक लहसून पेस्ट, प्याज, टमाटर, धनिया पावडर, हल्दी, लाल मिर्च किचन किंग गरम मसाला, नमक इमली का पल्प, व.डाल कर पकाए । इसमें मेथी वाले मुठिया बनाकर, तल कर डालते हैं । खूब सारा रसावाली और स्पाइसी सब्जी बनानी चाहिए । सर्वे करने का तरीका चापडी का हाथसे छोटे मोटे टुकड़े कर लें । व्यक्तिगत डीश में सब्जी परोसें और चापडीका मोटा मोटा चूरा, खानेवाले अपने हिसाब से इसे सब्जी मे डाल दे और खाने का मजा ले। संगत मे पापड या फ्रायम्स, अपनी पसंद का सलाड, ढेर सारी छाश होनी चाहिए । यहाँ इसके संग गुलाबजामुन ज्यादा चलता है ।

Lunch is ready.. finished cooking early.. have to go for vegetable shopping..
#Dum Alu
#Sugar snap peas
#dal.. chawal. Not in pic
#roti abhi banane baki hai
Ingredients..
Baby potatoes. 1kg.
Onion chopped 1cup.. 1chilli.. 1inch ginger..Tomato 1cup .. 2tbsp coriander seeds
1tsp turmeric powder
1tbsp red chilli powder mine is just for colour not spicy
Salt.. 1tsp garam masala
1tsp.. mustard seed
3tbsp oil.. pinch of asofoetda
In a cooker heat 1/2 tsp oil saute ginger. Onion. Chilli take it out and let it cool .
Take rest of the oil heat temper mustard seed and asofoetda add potatoes to it and saute them for 5minutes mean while grind together sauted onion.. tomato and coriander seeds. After 5minutes add chilli powder and turmeric to potato mix then add gravy to it add a cup of water and mix nicely. Cover the cooker and cook for one whistle.. when cools down.. check potatoes they are done or not. If not cook for some more time add garam masala to it and it's ready.

Susan MorrisOk ladies and gents how I make this is 1) dice lamb or beef I used beef this time. First boil the meat down in water one oxo cube one teaspoon pepper and half a tsp turmeric for at least 40 min make sure u have gravy. 2) cube and fry potatoes. 3) cut and slice thin onions I like lots so 2 big ones. 4) you can use dried chilli to taste but I like the red small chillies it’s up to you. 5) cube fresh tomatoes 2 big tomatoes 6) dice and mince fresh garlic to taste I like lots or use two heaped tsp of bottle garlic and flat tsp of ginger. In a large pan fry onions with oil with a large cinammon stick and 4 cloves and a little fresh curry leaves until just golden. Add garlic ginger one tsp turmeric the chillie and the tomatoes boil until tomatoes start to soft add meat and cook on low heat for 5 min Add the stock and a little salt if needed Cook on low heat until meat softens complete Than add the fried potatoes Please let me know if u make it different

Sambit BhattacharyaFor all who asked for Recipe kindly acknowledge seeing it by giving it a like on this comment. Thank you "Meat Ball Curry" / "Kofta Curry" Recipe : I used 200 gms of minced mutton (keema), it should give 8 meat balls of size you see in the pic (of course two vanished in my mouth before landing in the curry so you see 6 there). Note : Don't get it too minced otherwise you won't get the taste of biting or having mutton. Now wash the mince, squeeze water out, add 2 mid sized chopped onions (onions also squeeze water out), 1 tbsp ginger garlic paste, 2 tbsps Sattu (flour consisting of a mix of ground pulses & cereals, available in shop), 1 tbsp crushed roasted chana dal, 2 sliced breads without the sides/edges, 1 tsp each of turmeric, red chili powder & 1/2 tsp salt. Mix it well, make balls and keep it under fan for 1/2 hour. On a deep bottomed wok/ kadhai put 4 tbsps cooking oil and deep fry the balls 2 or 3 at a time. Your meat balls are ready, keep it aside. On same heated oil put 2 chopped midsized onions, 1 chopped tomato grinded to paste, 1 tbsp ginger garlic paste stir saute and add cup and half of water mixed with 1 tsp each of turmeric and red chili powder, salt to taste 1/2 tsp. Stir well for curry formation then add pcs of boiled potatoes stir for few mins and put the meat balls, stir lightly and keep in flame for few mins, sprinkle little garam masala powder add few green chillies your Meat ball/ Kofta Curry is ready.

Krustian BlaikieI always thought tongue was gross myself until I actually ate it. You have no idea what you are missing out on. It's a pain cleaning but thankfully my dad taught me how to do it quiet easily. Boil/scrape/put it back to boil/scrape.. Once you get used to it won't take more than 10 mins to clean. Trick is cleaning it fresh before it goes in the freezer.

I have watched our cook brush the tongue and then corn it, with salt, pepoercorns, bay leaf, cloves and cinnamon and chile salt petre... After a week in the brining solution, it would be boiled and the thick transparent skin, peeled off, it eould then be squashed into a special rectangular form, and the strained cooking liquid poured over and allowed to cool. After words it is sliced and fried....I am very fond of it

Shark curry rrcipe : For around 10 to 12 small to medium pieces of shark : boil : 150 gms onion , 200 gms tomato, 200 gm dry grated cocont, 1 tsp badisheep, 1 tsp dhania seeds, ladun around 10 12 pods 6 to 7 green chilles.
