Paruppu Urundai Kuzhambu | Urundai Kuzhambu Recipe - Step by Step

Checkout the recipe link in the comments section to have more insight into the recipe.

This Urundai kuzhambu recipe is nothing but dal balls cooked in tamarind puree with some special masala's. The process may be little lengthier but the end result is fantastic. There are so many methods to prepare this kuzhambu, by steaming the dal balls, or adding the balls directly, with or without coconut etc. We can also call this paruppu urundai kuzhambu as a pride of Tamil Nadu cuisine. This kuzhambu tastes best the next day and not only with rice,it goes very well with idli, dosa, idiyappam too.

Recipe Cuisine: Tamil Nadu, South Indian
Recipe Category: Lunch Side Dish
Preparation + Cook Time: 1.5 Hours
Serves: 3 to 4

For Making Urundai
-------------------------
Toordal – ½ cup
Channa dal – ¼ cup
Small Onion – 5
Garlic – 5 to 6 flakes
Green Chilli – 1
Saunf – 1 tsp
Ginger – 1 inch piece
Grated Coconut – 1 tblsp
Coriander, Curry Leaves – 2 tblsp
Red chilli – 3 or as needed
Salt – As needed

To Roast and Grind
-------------------------
Red Chilli – 5 to 6
Coriander Seeds – 1 tblsp
Fenugreek Seeds – 1 tsp
Grated Coconut – ¼ cup
For Kuzhambu
Small Onion – 5 to 6
Tomato – 2 to 3
Garlic – 10 flakes
Tamarind – 1 lemon sized
Turmeric powder – ¼ tsp
Salt – As needed

To Temper
-------------------------
Mustard Seeds – 1 tsp
Fenugreek Seeds – ¼ tsp
Thalippu Vadagam – 2 pinch
Curry Leaves – 1 Sprig
Oil – 2 tblsp

Method
-------------------------
For making Urundai
1. Soak dal in water for 2 to 3 hours. Wash and drain water. Grind both the dals, red chilli, saunf to a coarse paste. No need to add water.

2. Add chopped onion, garlic, green chilli, ginger and grated coconut. Then add coriander, curry leaves and salt to the dal and mix well.

3. Make small balls of equal size. Grease an idli plate with little oil and place the balls carefully. Steam it for 10 to 15 minutes (you can also skip this step and add the balls directly to kuzhambu when it starts boiling). Keep it by side. Soak tamarind in water and extract tamarind puree.

For making Kuzhambu
1. Take a kadai, add 1 tsp of oil and roast all the ingredients given in the table ‘To Roast and Grind’, except coconut. Switch off flame, add grated coconut and give a quick stir (If you want to short cut the process, just add chilli powder and dhania powder to the kuzhambu, grind coconut alone). Cool down and grind everything with little water.

2. Chop onion, tomato and garlic finely. Take a heavy bottom vessel, pour oil and temper with the items listed in the table ‘To Temper’. Now add onion and fry till transparent.

3.Then add garlic and tomatoes, saute well. Add tamarind extract, turmeric powder and salt.

4. When its start boiling, add the grinded paste. Keep boiling for 10 minutes in low flame. Now add the steamed urundai’s one by one carefully. Also boil the kuzhambu for another 5 minutes, until the urundai’s float on top and oil separates.

Garnish with coriander leaves. Serve it hot with rice and appalam.

Ashe-e-Reshteh. A Persian dish good enough for Good Friday. Learnt this dish from my Persian Dil's Mum, Shahla. It's an wholesome meal with lentils, noodles, veggies and herbs.

Ashe Reshteh.
Red Kidney Beans - 1 cup, soaked overnight
Chickpeas - 1 cup, soaked overnight
Lentils - 1 cup
Parsley - 1 bunch, chopped
Cilantro - 1 bunch, chopped
Spinach - 1 bunch, chopped
Scallion/chives - 1 bunch, chopped
Turmeric - 1 tsp
Salt and pepper to taste
Noodles (Reshteh). This is a Persian noodle which is slightly sour but you can use normal noodles.
For the garnish :
2 large onions, thinly sliced
8 cloves garlic, finely chopped
2 tblsp dried, powdered mint
Oil
1 cup Kashk. This is a Persian curd/whey. But you can use sour cream or curd with a squeeze of lemon in it.
Method:
Place the beans, chickpeas and lentils in a pressure cooker, add 8 cups of water n cook until lentils are tender. Add the chopped vegetables/greens, noodles, salt, pepper and turmeric. Stir well n cook for another 30-40 minutes on low heat. Add more water if needed. Adjust seasoning. Heat oil in a pan n dry onions till golden, remove n keep aside. Add garlic to the hot oil n saute for 3-5 minutes, remove n keep aside. Add the dried mint n saute for 2-3 minutes. Pour the soup in a large bowl, top with a generous amount of liquid kashk. Garnish with fried onions, garlic and mint. Serve hot.

Sambit BhattacharyaAll down the line in the family. Now keep 4 chopped onions dipped in little mik. On kadhai/ wok hot cooking white oil 4 tbsps, put 1/2 tsp cumin seeds, 4 dry red chilies and fry the onions dipped in milk (squeeze the milk out before frying) to golden brown and add the marinated chicken, pour the milk left from the onions and stir well, add 3 cups of water (use less water if you want dry or gravy) and allow chicken to tender. Add 1 tsp garam masala, few drops of ghee, its ready to serve. (You can add boiled golden brown fried potatoes in last stage of cooking).

Typically, panch phoron consists of fenugreek seed (methi मेथी दाना), nigella seed (मंग्रैल / कलौंजी), cumin seed (जीरा), black mustard seed (राई) and fennel seed (सौंफ़) in equal parts. Some cooks prefer to use a smaller proportion of fenugreek seeds, which have a mildly bitter taste.

Allyson GoddardThis is one vegetable (parwal) that I have not yet found in Sydney. The Indian shops have frozen parwal. I love the fried parwal and potatoes with kitchri. Also the dolma curry.

Doris VazDelicious!! Sambit, was browsing a grocery store and came upon a pack of different fish ( as far as I understood) I wonder of I could use this same recipe or only use the same type of fish. Thanks.

Delicious 😉 Spicy Supercrunchy Fried Chicken <3

Ingredients

1 good chicken, cut into serving pieces, or use 8 to 10 leg pieces (drumsticks and thighs), trimmed of excess fat
Salt and pepper to taste
1 tablespoon curry powder
1/2 teaspoon ground allspice
2 tablespoons minced garlic
1 Scotch bonnet (habanero), or other fresh chili, stemmed, seeded and minced, or cayenne to taste, optional
1 egg
1 cup flour
A mixture of lard and butter, as needed, or olive oil, or neutral oil like corn or grapeseed
Lemon or lime wedges for garnish

Method

1. In a bowl, toss the chicken with salt, pepper, curry, allspice, garlic, chili, egg and 2 tablespoons water. When everything is combined, blend in the flour, using your hands. Keep mixing until most of the flour is blended with the other ingredients and the chicken is coated (add more water or flour if mixture is too thin or too dry; it should be dry but not powdery). Let sit while you heat the fat.
2. Choose a skillet or casserole at least 12 inches in diameter that can be covered. Add enough fat to come to a depth of about 1/2 inch and turn heat to medium-high. If you\'re using butter, skim any foam as it rises to the surface.
3. When the fat is hot (a pinch of flour will sizzle) raise heat to high. Slowly add chicken pieces to skillet (if you add them all at once, temperature will plummet). Cover skillet, reduce the heat to medium-high, and cook for 7 minutes.
4. Uncover the skillet, turn the chicken and continue to cook, uncovered, for another 7 minutes. Turn the chicken again and cook for about 5 minutes more, turning as necessary to ensure that both sides are golden brown.
5. Remove the chicken from skillet and drain on paper towels. Serve chicken at any temperature, with lemon or lime wedges.
