Cream of Spinach Soup for babies and kids

Making kids eat veggies is not really easy task. Don’t let vegetables, or any healthy eating become a combat zone. I encourage them to come with me to buy groceries and make them participate in meal planning and help with its preparation. Taking them with you to the farmers market or grocery store and letting them pick one or two things to cook for them can make them far more excited to eat it later. Letting them wash and clean vegetables like carrots, cucumbers, beans and set the dining table gives them a sense ownership and makes them more excited and supportive at meal time. Full lunch time spread cooked by me for my mother, her favourites "Sour split red lintel" (Katha masoor dal), "Fish gravy", "Fish egg sour & sweet chutney", "Boiled smashed potato" & rice (not in pics).
For katha masoor dal I used black mustard seeds, dry red chilies, bay leaves, tamarind water, salt, turmeric, red chili, coriander & cumin powder.
For fish gravy I used turmeric, red chili, coriander, cumin powder, 5 spices/ Paanchporon & salt.
For fish egg. I made ball shape out of the egg of fish, mixed turmeric, salt and fried, then added tamarind water, sugar, salt & 5 spices /Paanchporon. In Bengali it is called "Macher dimer ombol."
For smashed potato I just boiled mashed it with little salt and made a ball, topped it with a green chili for decoration. I am sure my Mom will enjoy, hope you all like it too. I am off on leisure trip/ sojourn for the weekend upcountry. Thank you all, have a great weekend.

My first attempt at making Sambhar ...

Have also attached a picture of the Brinjal/Potato curry with dried shrimps and dry fish. WILL ADD THE RECIPE IN COMMENTS

Vegetable Sambar Recipe –I made it the easy and quick way in a pressure cooker.

When you are in a hurry to cook a meal then these quick recipes are a life saver.

In this sambar recipe, I use sambar powder and cook the vegetables and the tuar dhal in a pressure cooker. Cooking in pressure cooker reduces the cooking time considerably.

Usually the vegetables are cooked separately and then the mashed dal is added to the cooked vegetables. Here, I've used veggies like small brinjals, okra, potatoes, onions and tomatoes. However, you can have your own choice of veggies.

Ingredients for the Sambar Recipe:

1 cup tuar dhal
Cleaned and chopped vegetables like okra, potatoes, shallots or onions, small round brinjals, tomatoes

1 tablespoon tamarind soaked in ½ cup water
1 to 1.5 tablespoon sambar powder
½ teaspoon red chilli powder
½ teaspoon turmeric (haldi powder)
a pinch of asafoetida (hing)
2.5 to 3 cups water for pressure cooking the dal
2 cups water to be added later
salt as required

for the tempering of sambar
2 to 3 tablespoon oil,
2 to 3 dry red chillies
1 teaspoon mustard seeds (rai)
¼ teaspoon fenugreek seeds (methi seeds), optional
1 to 2 pinches asafoetida (hing)
2 to 3 garlic cloves crushed lightly with the peels, optional
12 to 15 curry leaves

METHOD

first soak the tamarind in warm water for 30 mins.

boil dal in 2.5 to 3 cups water in the pressure cooker for 8-9 whistles on medium to high flame. the dal should become soft and mushy.

once the pressure settles down on its own, remove the lid.
now add the chopped veggies, turmeric powder, red chili powder, asafoetida and salt. add 2 cup water and stir well.

pressure cook again for 1 whistle on medium to high flame. once the pressure settles down on its own, remove the lid.

add the sambar powder and tamarind pulp. if the consistency of sambar is thick, then add some water.

keep the cooker on the stove and and then simmer the sambar for 10-12 minutes on a low flame.

keep on stirring at intervals so that the dal doesn't stick to the bottom. switch off and keep the sambar covered.

in a small pan, heat oil. crackle the mustard seeds first.
then add the fenugreek seeds, garlic, red chilies, asafoetida and curry leaves.
fry till the garlic turns a light brown and the red chillies change color. pour the whole tempering in the steaming hot sambar. close with a lid so that the flavors infuse for about 5-6 minutes.

"Fish Coconut Curry" with potatoes same recipe as "Prawn Coconut Gravy" posted yesterday. Only here I used more water and I did not use onions to make it smoother and lighter version but suggest use chopped fried onions.
Recipe : Fry the fish pcs (6 nos) mixed with little turmeric & salt in 4 tbsps cooking oil & keep aside. Now on same heated oil put boiled potatoes (4 nos) in halves, fry & put 2 cups of water stirred with 2 tsps ginger garlic paste, 1 tsp each of turmeric, red chili powder & salt, 1/4 tsp each of coriander, cumin powder, few slit green chiles and add half cup of coconut milk stirred with 3 tsps sugar, stir well to colour add the fried fish pcs, sprinkle little grated coconut on top (extracted from coconut milk), pinch of garam masala powder it's ready to serve. Goes very well with rice, lunch time meal.

Recipe : Rohu fish pcs mix turmeric, salt & deep fry, keep aside. Now on hot cooking oil 4 tbsps give 1/2 tsp of 5 spices (Paanchforan), 2 cups of tamarind water (squeeze seeds out) with 1tsp each of turmeric, red chili powder, 1/2 tsp coriander & cumin powder, 1 tsp salt, 4 tsps sugar, stir well add the fish pcs & few green chilies, its ready to serve.

"Dry Chicken gravy" goes well with chapatis or parathas for dinner. Serve hot.
Recipe : 400 gms of chicken marinade with 1tsp each of turmeric, red chili powder & salt, 4 tsps ginger garlic paste (use ginger more than garlic, it will bring the black colour texture & taste), 3 grated onions, 1 tomato grind paste (it will bring the red colour). Boil potatoes and fry golden brown. Now on hot cooking oil (4 tbsps) put the marinaded chicken stir & fry well then add 2 cups of water, let chicken become soft ( poke with fork to see if soft) then add the boiled fried potatoes few green chilies, sprinkle little garam masala powder, its ready to serve.

Beef curry for lunch
1/2 kg beef cut n washed. Add salt to taste n keep aside.
Grind to a paste 20 Kashmiri chillies, 3 tsps dry coriander, 1 tsp peppercorns, 1 1/2 tsp cumin seeds, 1/2 tsp turmeric pwd, 1/2 tsp cloves, 3/4 pc cinnamon sticks, 20 flakes garlic, 1" pc ginger, 1 tsp salt.
NB: Only use 5 tbsps of this masala for 1/2 kg beef. The remaining can be refrigerated. You can make chicken n pork curry too.
Procedure:
Heat 5 tbsps oil in the cooker add 2 bay leaves n fry 3 sliced onions till light brown. Add 2 chopped tomatoes n cook till soft. Add masala with little water n fry till it comes on oil. Add beef n fry for 3 minutes. Add 1 cup water n cook for 15 minutes after the whistle. When cooled, open n add 2 big potatoes cut in 6 pieces of each potato n fry a little. Then add 1 cup thin coconut nut milk n cook for 10 minutes in the cooker. Add 1 tbsp vinegar or lime juice whichever y prefer. n mix. Add 1 cup thick coconut milk n simmer till the gravy comes on oil.adjust seasoning I.e. salt, vinegar. Garnish with coriander leaves. Best eaten with anything. Rice, bread, chapati or pao.

Delicious 😉 Chili in Bread Bowls Recipe <3

Ingredients

1 tablespoon all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 pound each beef stew meat, boneless skinless chicken breast and boneless pork, cut into cubes
1 tablespoon canola oil
1 medium onion, chopped
1 medium green pepper, chopped
1 jalapeno pepper, seeded and chopped
1 can (28 ounces) diced tomatoes, drained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/2 ounces) navy beans or great northern beans, rinsed and drained
1 can (8 ounces) tomato sauce
1 tablespoon chili powder
1 garlic clove, minced
1-1/2 teaspoons ground cumin
1/2 teaspoon dried basil
1/4 to 1/2 teaspoon cayenne pepper
9 large hard rolls
Sour cream, chopped green onions and sweet red pepper, optional

Directions
In a large resealable plastic bag, combine the flour, salt and pepper. Add meat in batches; toss to coat. In a large skillet, brown meat in oil in batches. Transfer to a 5-qt. slow cooker with a slotted spoon. Stir in onion, peppers, tomatoes, beans, tomato sauce and
seasonings. Cover and cook on low for 7-8 hours or until the meat is tender.
Cut tops off rolls; carefully hollow out bottom halves. Spoon about 1 cup of chili into each roll. Garnish with sour cream, onions and red pepper if desired. Yield: 9 servings.
