Breakfast - scrambled eggs in truffle oil with a side of avocado
Lunch - homemade (from scratch) dosa
Dinner - Veg tacos (I told him I didn't know what to eat for dinner and he went straight into the kitchen and whipped a veg taco for me)

Start your day with less work and a Healthy Breakfast .
Do you like your Dosa very Crispy and with Less Grains or without rice or with Quinoa .
Soak for 3 hours , Grind for 5 minutes in regular Blender and ferment overnight to enjoy a tasty Dosa . Fermentation helps in protein digestion and Dosa will taste good .
The batter will stay good for 5 to 6 days .

Laid back Sundays and eggs for breakfast is an unsaid rule. And most of us love eggs in every form. While, I wanted to get into the omelette mode today, I also wanted to experiment. By now, the whole world knows that I am an oats fanatic. Oats find their way into every meal very easily. Sometimes, I get asked if I am the brand ambassador of any company for all the oats I stock and use in my food. Frankly, no. It's just one ingredient that I love and can eat every single day. Coming back to my breakfast, I decided the oats had to be used. And so I whipped up an power-packed omelette with egg whites, oats, chopped onion, green chillies,black olives, chilli flakes, black pepper,oregano, salt and some freshly chopped coriander. Topped it with some grated cheese and cooked it on low flame, till the omelette was set and the cheese nicely melted. It looked heavenly and tasted even better with a slice of multigrain bread. Can you believe a side dish for breakfast items made within 10 minutes? Yes, this raw onion chutney recipe is the rescuer which comes handy in our busy mornings and can be named as fatafat chutney also. There is no long list of ingredients or fine chopping of veggies or stove top cooking in simmer for long time, except the tempering portion which takes a minute. Just go through the recipe in detail, where you may go wrong is the grinding part. The first time when I tried this pacha vengaya chutney, it was little bitter and I was wondering why? It is because of the shallots, if grinded for longer time to get smooth texture, it taste bitter was the answer. After all the festive celebrations and high calorie food intake, today I am sharing an easy kodo millet upma recipe. It is named as Varagu in Tamil, Arikelu in Telugu, Kodra in Hindi and Harka in Kannada. The health benefits of this millet is numerous and it was used in India 3000 years ago. It is very high in protein, fibre, it has low fat, so helps in weight loss and it is gluten free also. For busy mornings, this varagu arisi upma recipe can be prepared plain also without any veggies and a spoonful of sugar is enough to enjoy your breakfast. But it tastes too good with coconut chutney, tiffin sambar and onion chutney.

Serves : 2

Ingredients
---------------------
Kodo Millet – 1/2 Cup
Onion – 1
Green Chilli – 2 to 3
Ginger – 1 Small Piece
Mixed Vegetables – 1 / 2 Cup (Carrot, Beans, Peas)
Water – 1 cup
Salt – As Required
Lemon Juice – 1 tsp (Optional)

To Temper
---------------------
Oil – 1 tbsp
Mustard Seeds – 1 tsp
Urad dal – 1/2 tsp
Channa dal -1/2 tsp
Hing – 1 Generous pinch
Curry Leaves – 1 sprig

Method
---------------------
1. Rinse millet well 2 to 3 times and soak in water for 5 minutes. Chop onion lengthwise, slit green chilli, crush ginger and other veggies finely.

2. Drain the water completely from the millets and keep aside. Heat oil in a pan, add mustard seeds and let it splutter. Then add urad dal and channa dal.

3. Add hing, green chilli, ginger, curry leaves and saute till the raw smell in the ginger leaves.

4. Add onion and saute till it turns transparent. Now add the chopped veggies and saute for a while in low flame.

5. Pour water, add required salt and cook the veggies for 2 to 3 minutes in low flame. The veggies should retain it’s crunchiness and don’t make it mushy.

6. Once the water starts roll boiling, add millet very slowly and mix well. Millet absorbs the water quickly, keep 1/2 cup of hot water by side, if the water is absorbed quickly, add little more. Cook covered for 5 to 6 minutes in very low flame. Stir in the middle now and then.

7. Switch off flame and if preferred squeeze lemon juice on top and give a quick mix.

Serve this varagu arisi upma with kara chutney.

Serves: 10 Cooking Time: 0-minutes
Ingredients
2 cups heavy whipping cream (cold)
1 (14-ounce) can sweetened condensed milk
2 teaspoons vanilla extract (I used Vain Indonesian Vanilla Extracted in Ginger Spirits!)
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 (5.1-ounce) package Original Cannoli Chips Cinnamon and Sugar Cannoli Chips, crushed into various sized pieces (approximately 2 cups)
Instructions

Line a loaf pan with parchment paper and set aside (unless you have reusable ice cream containers like I do--then use those!).

In the bowl of a stand mixer, affixed with the whisk attachment, add the heavy whipping cream. Whip the cream on medium-high speed until the cream thickens and you reach stiff peak status. You have stiff peaks when you can turn the whisk upside down, with the cream on it, and the peak still holds its shape. Do not over mix though. Or you get butter. Not what we are going for here.

Add the sweetened condensed milk, vanilla extract, ground cinnamon and ground nutmeg to the mixer. Mix on medium-high speed until all ingredients are incorporated and the mixture is thick. Remove the bowl from the mixer and fold in the cannoli chips.

Pour mixture into prepared loaf pan or ice cream containers. Cover the loaf pan with plastic wrap. Put ice cream in the freezer to set and freeze (preferably overnight).

Serve cold with the option to sprinkle on more cannoli chips and drizzle on caramel sauce right before serving.
Notes
Ice cream will stay fresh in the freezer, when properly stored, for 2-3 weeks.

Delicious πŸ˜‰ Spicy Supercrunchy Fried Chicken <3

Ingredients

1 good chicken, cut into serving pieces, or use 8 to 10 leg pieces (drumsticks and thighs), trimmed of excess fat
Salt and pepper to taste
1 tablespoon curry powder
1/2 teaspoon ground allspice
2 tablespoons minced garlic
1 Scotch bonnet (habanero), or other fresh chili, stemmed, seeded and minced, or cayenne to taste, optional
1 egg
1 cup flour
A mixture of lard and butter, as needed, or olive oil, or neutral oil like corn or grapeseed
Lemon or lime wedges for garnish

Method

1. In a bowl, toss the chicken with salt, pepper, curry, allspice, garlic, chili, egg and 2 tablespoons water. When everything is combined, blend in the flour, using your hands. Keep mixing until most of the flour is blended with the other ingredients and the chicken is coated (add more water or flour if mixture is too thin or too dry; it should be dry but not powdery). Let sit while you heat the fat.
2. Choose a skillet or casserole at least 12 inches in diameter that can be covered. Add enough fat to come to a depth of about 1/2 inch and turn heat to medium-high. If you\'re using butter, skim any foam as it rises to the surface.
3. When the fat is hot (a pinch of flour will sizzle) raise heat to high. Slowly add chicken pieces to skillet (if you add them all at once, temperature will plummet). Cover skillet, reduce the heat to medium-high, and cook for 7 minutes.
4. Uncover the skillet, turn the chicken and continue to cook, uncovered, for another 7 minutes. Turn the chicken again and cook for about 5 minutes more, turning as necessary to ensure that both sides are golden brown.
5. Remove the chicken from skillet and drain on paper towels. Serve chicken at any temperature, with lemon or lime wedges.
