Recipe:
Medu Vadas-
2 cups urad dal soaked for 6-8 hours and ground into a smooth paste of medium thick consistency
2 tsp finely chopped ginger and green chillies
1/4 tsp heeng
1 finely chopped onion
A few curry leaves finely chopped
A few whole Kali mirch roughly crushed
1 tsp saunf
Salt to taste
Oil for frying
Mix all the ingredients into the dal paste..whip well with hand to make fluffy and fry in medium hot oil the way shown in video or normal round vadas till golden.

Serves: 10 Cooking Time: 0-minutes
Ingredients
2 cups heavy whipping cream (cold)
1 (14-ounce) can sweetened condensed milk
2 teaspoons vanilla extract (I used Vain Indonesian Vanilla Extracted in Ginger Spirits!)
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 (5.1-ounce) package Original Cannoli Chips Cinnamon and Sugar Cannoli Chips, crushed into various sized pieces (approximately 2 cups)
Instructions

Line a loaf pan with parchment paper and set aside (unless you have reusable ice cream containers like I do--then use those!).

In the bowl of a stand mixer, affixed with the whisk attachment, add the heavy whipping cream. Whip the cream on medium-high speed until the cream thickens and you reach stiff peak status. You have stiff peaks when you can turn the whisk upside down, with the cream on it, and the peak still holds its shape. Do not over mix though. Or you get butter. Not what we are going for here.

Add the sweetened condensed milk, vanilla extract, ground cinnamon and ground nutmeg to the mixer. Mix on medium-high speed until all ingredients are incorporated and the mixture is thick. Remove the bowl from the mixer and fold in the cannoli chips.

Pour mixture into prepared loaf pan or ice cream containers. Cover the loaf pan with plastic wrap. Put ice cream in the freezer to set and freeze (preferably overnight).

Serve cold with the option to sprinkle on more cannoli chips and drizzle on caramel sauce right before serving.
Notes
Ice cream will stay fresh in the freezer, when properly stored, for 2-3 weeks.

Delicious πŸ˜‰ Spicy Supercrunchy Fried Chicken <3

Ingredients

1 good chicken, cut into serving pieces, or use 8 to 10 leg pieces (drumsticks and thighs), trimmed of excess fat
Salt and pepper to taste
1 tablespoon curry powder
1/2 teaspoon ground allspice
2 tablespoons minced garlic
1 Scotch bonnet (habanero), or other fresh chili, stemmed, seeded and minced, or cayenne to taste, optional
1 egg
1 cup flour
A mixture of lard and butter, as needed, or olive oil, or neutral oil like corn or grapeseed
Lemon or lime wedges for garnish

Method

1. In a bowl, toss the chicken with salt, pepper, curry, allspice, garlic, chili, egg and 2 tablespoons water. When everything is combined, blend in the flour, using your hands. Keep mixing until most of the flour is blended with the other ingredients and the chicken is coated (add more water or flour if mixture is too thin or too dry; it should be dry but not powdery). Let sit while you heat the fat.
2. Choose a skillet or casserole at least 12 inches in diameter that can be covered. Add enough fat to come to a depth of about 1/2 inch and turn heat to medium-high. If you\'re using butter, skim any foam as it rises to the surface.
3. When the fat is hot (a pinch of flour will sizzle) raise heat to high. Slowly add chicken pieces to skillet (if you add them all at once, temperature will plummet). Cover skillet, reduce the heat to medium-high, and cook for 7 minutes.
4. Uncover the skillet, turn the chicken and continue to cook, uncovered, for another 7 minutes. Turn the chicken again and cook for about 5 minutes more, turning as necessary to ensure that both sides are golden brown.
5. Remove the chicken from skillet and drain on paper towels. Serve chicken at any temperature, with lemon or lime wedges.
