Mackerel fish cutlets.
Clean n wash 5 mackerels (medium or big ones), apply salt n boil with little water. Add 1/2 tsp turmeric pwd n 5 cloves. Cool n drain water, remove bones n shred.
Heat 2 tsp oil in a pan . Add 1tbsp garlic cut very fine n fry for a sec. Add 3 big onions chopped fine n 3 green chillies chopped fine n fry covered on slow flame till soft n light golden.
Add 1/2 tsp garam masala, 1/2 tsp pepper pwd, 1/2 cup coriander leaves , a dash of vinegar n salt to taste. Mix well. Should be dry. Cool n mix with fish. Add 1 egg . You can add 2 slices bread soaked n squeezed or 2 tbsps breadcrumbs to make the mixture firm as it shouldn't be soggy.
Shape into cutlets. Apply semololina directly or dip cutlets in beaten egg n then semololina. Shallow fry on both sides.

When I never knew cooking I used to watch my mom making it very like you, daintily and shapely. I love it with steaming hot fine rice with drops of ghee, pinch of salt and the crispy fish cutlets. For dinner I settle with buttered bread slices.

Pamela GordonI made fish cutlets using canned tuna. Drain off the brine, flake and make cutlets like you make any other cutlet. In fact I chopped, onions, green chillies very fine, along with a few finely chopped mint leaves, pepper powder, a little cinnamon powder, salt to taste and added to the fish and mixed well. Then I added boiled, cooled and mashed potato to the fish mix and mixed well. Then divide into balls, shape, dip in beaten egg mixture, then bread crumbs and pan fry both sides till a golden brown. When shaping the cutlets if you use a butter knife or anything flat to press while shaping the cutlets you will not get a dip in the centre. A tip from my sis in law! Just wanted to share .

Brinjal Mince Bake.
Mince, Beef/Mutton - 1/2 kg
Round Brinjals - 5-6 medium size
Onion - 1, medium chopped fine
Ginger/garlic paste - 2 tsp
Green chillies - 2, finely chopped
Pepper pwd - 1 tsp
Garam masala - 1/2 tsp
Mint leaves - 1 tbsp, finely chopped
Coriander leaves - 1 tbsp, finely chopped
Salt to taste
Oil
Egg - 1, beaten
Bread crumb
Method - Cut the brinjals length -wise into halves with the stems. Cook the brinjal halves in some water. Remove and scrape away the pulp and keep aside. Keep the brinjal shells. Heat 2 tbsp of oil in a pan and saute the onions till golden brown. Add the ginger /garlic paste and fry. Add the green chillies, pepper pwd, mint, coriander and salt and fry well. Add the mince and cook till done and dry. Now add the brinjal pulp and cook till dry. Fill the brinjal halves with the mince. Brush the mince side of the brinjal with beaten egg and sprinkle bread crumbs and fry in a frying pan in hot oil, like cutlets.

Andrea's cheesy spinach and tuna fish cutlets. Very good evening snack. Or as a side dish.
If you don't like to use cheese I have also included how to add potatoes instead. Either of these is required to make the mixture sticky so it binds together which prevents the cutlets from breaking apart.

For making the stuffing
Onion, large, chopped- 3
Curry leaves- 1 stem (optional)
Ginger-Garlic paste- ½ tbsp
Spinach, chopped- 2 cups
Garam masala ( cardamom-2, cloves-2, cinnamon stick- ½ inch slice- grind into powder)- 1 tsp
Chili powder- 1 tsp
Turmeric powder- ¼ tsp
Fennel powder- 2 tsp
Canned Tuna, in Water- 12 oz
Potatoes, cooked -2 or cheese 🧀 shredded cheddar 1 cup ( cheese or potato is needed as I sing agents as it makes the mixture stick together and hence the cutlets don't break off)
Vegetable oil- 1 tbsp
Salt- to taste
While frying:
2 eggs
Bread crumbs- 2 to 3 cups or enough to coat the tuna cutlets
Vegetable oil- for frying

Instructions:
(If using potatoes) Boil 2 potatoes in boiling water until the potatoes are fully cooked or cook in microwave. Peel the skin off and keep aside.

Place a wide non-stick pan or skillet over medium heat, add oil, then add curry leaves, onions, salt and saute until onions are translucent.

Add ginger-garlic paste and saute for a few minutes.

Add the spinach and saute for a few minutes along with garam masala, chili powder, turmeric powder and fennel powder, combine well.

Now add the canned tuna.

Mix everything well, when the tuna is almost cooked, add cheese.
(If using potatoes) Remove the pan from the heat.
Add the cooked, peeled and mashed potatoes and with a wooden fork or spoon mix until it is combined well with the tuna mixture.
When the mixture has cooled down, make medium sized oval shaped balls (or round shape out of these and flatten between the palm of your hands) and keep aside.
Frying
Heat a deep frying pan, add enough oil required for frying.
Whisk 2 eggs in a small bowl.
Spread the bread crumbs on a plate.
Take each tuna balls, first dip it in the egg and then gently roll it into the bread crumbs, coat it with the crumbs evenly.
Fry them in hot oil until golden brown.
Transfer to a paper towel. Serve with ketchup or any other dipping sauce.
