Though the main theme of this group is food, Euphoric Delights is not just a 'food and recipe' group. It is a place to connect, mingle and share. As many of you may have noticed, the group structure is open and fluid. When we go to a restaurant, we donโ€™t just eat. We make it conversations, we share experiences, and we talk, about everything under the sun. Thatโ€™s how we make merry. We see this group to be the same way.

A place where people can chat, make friends, make queries, ask questions that are not just about food and share oneโ€™s point of view. It's perfectly okay to go off topic. Ask/ talk about anything that is on your mind. But please keep the following guidelines in mind.

1) NO ADS, PROMOTIONS OR SPAM of any kind, please. (Direct/ or indirect via inboxing etc) It's annoying and tacky. Those posts will be deleted and the people, removed from the group without prior warning. The group is a commercial free group. Please do not treat this group as a mailing list or a database for advertising for your business/events etc. All posts carrying any kind of promotions (even if in the comment section) will deleted. Use the search option (pictures below) using keywords to look up previously posted information. If you are looking for a particular recipe. The search option is really helpful. Simply type the keywords.

You are welcome to share food pictures without recipes too, on this forum. However, if someone asks for a recipe, it is polite to answer them. Please also include tags like #EDRecipeIncluded #EDRecipenotincluded to set the expectations of members interested in your post for recipe. If you are interested in following a post, simply turn the notifications of the post on.

6) Please refrain from over posting on the group. Unless an issue of extreme importance (seeking help) comes up, please stick to making one post per day. Please do not make repeat posts. Try to bump the post made earlier if there are no responses. Or delete the first one before posting another.
Please also learn to use the search option. Sometimes, you can find the answer to the question even before you ask!

Shalini RamachandranIf you want to help other members searching for a recipe, to find yours, using of Hashtags can be extremely helpful. This helps people find posts about topics theyโ€™re interested in. To make a hashtag, write # (the number sign) along with โ€˜EDโ€™ in the beginning and a keyword or phrase (written as one word) and add it to your post. For example: #EDRecipe #EDVegetarian #EDEntree #EDDessert#EDAppetizer#EDFusion #EDIndoChinese #EDIndian#EDPotato#EDShaliniRamachandran When you click on a hashtag, youโ€™ll see a feed of posts that include that hashtag. You'll also see some related hashtags at the top. You can search for a hashtag using the search bar at the top of any page. The more you use these, the more your posts will show up in searches. You can also edit the previous posts you have made, to include the HastTags by simply clicking on the โ€˜Edit Postโ€™ feature. See pic below. This will help make searching of recipes easier.

Rema SureshSwati look on top there is a magnifying glass before euphoric delights. If you search there you will get all the posts with those filtered words.It will at least narrow your search if you are not near a pc. Hope this helps.

Also, i canot locate an app called as 'facebook group' for ipad. Maybe I need a coffee!!! ๐Ÿ˜‰ It would be great to have the button on ipad...coz i am more on it than my laptop. Paneer Tikka Recipe | How to make Paneer Tikka

This Paneer Tikka recipe is such an addictive and yummy starter / appetizer prepared with veggies and paneer. Curd is the main ingredient here, followed by variety of Indian spice powders. Though the ingredient list seems to be lengthier, how to make paneer tikka is not at all a complicated process and can be done in few minutes. This is a very versatile recipe, that veggies can be altered, paneer can be replaced with Tofu paneer and finally, the whole dish can be baked / grilled / Barbequed or even done on stove top. So donโ€™t miss to try this delicious Paneer Tikka recipe as it is a kids friendly recipe also.

Recipe Cuisine: North Indian

Preparation : 20 Mins + 2 hours
Cook time : 15 Mins | Serves : 2 to 3

Ingredients
---------------------
Paneer (Cottage Cheese) โ€“ 200 gm
Big Onion โ€“ 1
Tomato โ€“ 1
Capsicum (Bell pepper) โ€“ 1/2 cup mixed (yellow, green, red)
Chat Masala powder โ€“ 1 /2 tsp (To sprinkle on top)
Oil โ€“ 2 tblsp

For the Marinade
---------------------
Thick Curd / Hung curd โ€“ 1 cup
Besan Flour / Bengal Gram Flour โ€“ 2 tblsp
Turmeric Powder โ€“ 1/ 4 tsp
Chilli Powder โ€“ 1.5 tblsp
Garam Masala Powder โ€“ 1.5 tsp
Jeera Powder โ€“ 1 tsp
Ginger Garlic Paste โ€“ 1/2 tblsp
Kasuri Methi Leaves โ€“ 2 tsp
Lemon Juice โ€“ 2 tsp
Salt โ€“ As Required

Method
---------------------
1. Dice onion, capsicum and paneer into 2โ€ณ inch pieces. Also de-seed tomato and cube it. Then get ready with the dry ingredients. In a pan, add 1 tblsp of oil and besan flour.Paneer

2. Mix it well without any lumps. Fry the besan flour in low flame, until bubbles appear and the raw smell leaves off. Switch off flame and let it cool down. In a large bowl, add curd, turmeric powder, chilli powder, garam masala powder and jeera powder. Then add ginger garlic paste, crushed kasuri methi leaves followed by besan mixture and salt.How to make

3. Whisk it well to a smooth batter. Check for spice level and salt, if required adjust it. Now add paneer, capsicum, onion and tomato. Mix everything very gently.

4. Finally squeeze lemon juice and mix again. Refrigerate for minimum 2 hours or overnight. Line a baking tray with foil paper and brush it with little oil.

5. Now skewer the paneer and veggies alternatively or as per preference. If using wooden skewers soak in water for 1/2 hour and then use it. This step helps to avoid burning of sticks.

6. Arrange it in a tray. Apply the remaining masala on top. Brush the paneer and veggies with oil all over.

7. Pre-heat the oven at 200c for 15 minutes. Place the tray in the oven, bake it for 10 minutes at 200c. Then flip it to the other side, apply little oil and bake for another 5 minutes at 180c.

How to make Paneer tikka on stove top
-------------------------------------
1. Heat a non stick tawa, place the veggies and paneer over the tawa. Add little oil and cook it in medium flame for 3 to 4 mins. Flip it to the other side, add little more oil and cook for another 3 mins until the paneer and veggies turn golden brown. Then skewer the veggies and paneer. Frying it separately helps in even cooking, else you can skewer it and then fry also.

Sprinkle chat masala on top and delicious paneer tikka is ready to serve.

Evening snack.. whose up for some TANDOORI CHICKEN!!! My house smells like tandoori paste, mint and lime ๐Ÿ˜›. Enjoy!!!!

Yogurt is mixed with small cube sliced cucumber ๐Ÿฅ’, pinch of salt and thick mint sauce and topped of with a drizzle of pepper. Best combo to go along with tandoori chicken!! ๐Ÿ—. Mouth watering?! ๐Ÿ˜๐Ÿ‘

Tandoori chicken recipe:
I just used readymade tandoori paste and marinated and baked the chicken. But to make tandoori paste marinade from scratch the ingredients are water, salt,chilli powder, coriander powder, garlic paste, lentil powder, cumin powder, cotton seed oil, garam masala, turmeric powder and food colour E129 (optional). Make sure to slit the chicken and keep it marinated for few hours before baking for maximum effect!! ๐Ÿ˜‰ Enjoy!

Anglo indian cutlets in remembrance of my grandma who loved making beef cutlets. Here is a recipe with cooking pictures ๐Ÿ™‚. Enjoy!

Recipe:
Depends on what cutlet, for beetroot, fish cutlet etc the recipe would be slightly different.

For the beef cutlet,

Cut onions, ginger, curry leaves, and chillies And mince them using food processor; you can also chop them really fine with a knife.

In a pan, heat 3 tbsp of coconut oil, throw in some curry leaves and add the minced onion. Keep the fire on low.

Saute till it becomes translucent, then add salt, garam masala, and pepper.

Add boiled minced beef and mashed potato into this, mix well till combined and there is no moisture left from the potato.

When cooled....mix everything together with your hand.; if you like more pepper powder, salt, and garam masala you can add that and other spices and herbs to suit your taste.

Roll into small oval shapes with your fingers or any shape you prefer.

Dip each cutlet into lightly beaten egg and then roll in bread crumbs....You can keep this in fridge for up to a week.
Heat oil and put in the cutlets....and fry till golden brown....drain on a tissue.

Serve hot with tomato sauce.

Enjoy!

Doris VazJennifer, I had the same problem. I squeezed two slices of bread and broke it up and added to my mix. Then I put in tge fridge so found it easier to form the cutlets. This worked for me. Kindly remember what works for one may not work out for the other. Thanks.

Andrea FredyMake sure mix is really very dry. That's very important. Then only put the cutlets into the oil when the oil is very hot. Make sure not to put a lot of cutlets at a time into the fry pan. Then only attempt to turn the cutlet after one side is fully done. Don't keep turning more than once max twice. The mixture should be cool and stern to touch before dipping into egg and coating with breadcrumb.

Andrea FredyIf you see my mixture it's really dry and sticky. The mashed potato helps it to be sticky. The water should be completely absorbed from the potato. Most probably breakage happens when there is still water left in the mixture and it's not sturdy and dry enough.

Myrtle MaxwellFreshly boiled potatoes have good binding capacity. I use fresh minced onion and ginger garlic. There is less water in the mixture. First make Balls out of the mixture This will help you to. know if the cutlets will be firm or else mix in more mashed potato or breadcrumbs to form tight balls. Shape them into rounds, dip each in lightly beaten egg , then coat it well with breadcrumbs. Keep shaping on the palm in case there are any cracks. You can repeat the process with those which develop cracks.

Beef Cutlets

Simple yet yummy

Ingredients:
500 gms. Minced beef
300 GM's boiled Potatoes
1 TSP pepper powder
1/2 bunch finely chopped coriander
1/4 bunch finely chopped mint
1/2 TSP garam masala
1 TSP ginger garlic paste
1 onion finely minced
1 Egg
Bread crumbs for coating
Oil for frying.
Method:
Cook the mince with the ginger garlic paste half of the onion, garam masala and mint till cooked n dry, once done and cooled mix all the remaining ingredients and form the cutlets dip in egg coat with the bread crumbs and fry till golden brown. Garnish and serve hot..
