Archana BhargavaPANEER TIKKA , HARA BHARA KEBAB WITH RED BELL PEPPER SAUCE
1 red bell pepper
4-5 cloves of garlic
1 roughly chopped onion
Salt to taste
1 tsp sugar
2 tbsp cream
1 tsp oil
Roast the bell pepper , directly on gas , by holding it with a fork . Roast it by turning them at regular intervals , until becomes little charred . When it cools down completely , peel it and roughly chop it . Now heat oil in a pan and put onion and garlic , roast them for 2 minutes . Now grind together bell pepper , onion and garlic in a mixer grinder , into a smooth paste . Again put this paste in a pan and cook with salt and sugar , until one boil comes . Then add cream and cook for 2 more minutes , add some water if required ,to adjust the consistency . It shoul be like a sauce .
FOR PANEER TIKKA
Take a square piece of paneer (one and a half inch in size ) , you can take according to your choice . Marinate with salt and lime juice for 15 minutes . Then grease a pan and roast the paneer , just slightly , slightly , from both the sides .
FOR HARA BHARA KEBAB
1/2 cup frozen green peas or fresh peas
1 boiled and mashed potato
1 tbsp mawa , optional
1 tsp ginger greenchillies paste
Salt to taste
1/2 tsp chaat masala
1 tsp oil for roasting peas
Some oil for brushing the kebabs
Heat oil in a pan and roast peas , cook for 5 minutes . When cools down completely , then grind it into a smooth paste . Take it out in a mixing bowl and add all the other ingredients together . Mix nicely and with wet hands make round shape kebab . Grease a pan and place the kebabs to roast , until light brown from both the sides .
Other ingredients for garnishing
Some red bell pepper julienne
Some green capsicum julienne
Some onion rings
Take a serving plate , first spread some red bell pepper sauce in the center , in round shape . Then place the paneer tikka on top of the sauce , in the center . Place the hara bhara kebab on top of the paneer tikka . Stick a piece of red bell pepper and green capsicum each on the kebab . Now arrange the onion rings on the outer side of the sauce circle , then arrange the bell peppers julienne . The platter is ready to serve . Enjoy .
